I can’t believe how popular princess cakes are! I had about 8 or so requests for princess cakes so far! The good thing about it is that it’s a fairly straightforward cake to make, but the girls go crazy over them.
The first princess cakes I’ve ever made were posted last year and were made with jello cakes and frosted with whipped cream (a great, cool summer treat). The next set of princess cakes were made with carrot cake frosted with cream cheese frosting and chocolate cake frosted with buttercream frosting. I try not to sweeten my frosting too much, so often use less sugar than called for in recipes. When I do this, I cut the vanilla extract in 1/2 so that the frosting is not too soft and difficult to work with.
