Fire Truck Cake II

I was on fire the weekend of June 14… This was the first time I ever tried making 2 cakes back-to-back and although I was pretty calm at the start of it, I was pretty much smoldering by the end of it. I didn’t realize how much harder it is to plan the time with 2 kids, though I do have an great husband who helps out as much as he can so I can pursue my hobby…errr…possibly obsession…

I also thought since this was my second try at a fire truck cake things would go much faster and more smoothly. And it did, compared to the first time I tried it. The difference was I made the cake much bigger than last time, using a full sheet instead of a half sheet. I also misplaced all of the templates I had created previously for the white chocolate ladders and hooks. Again, the most difficult part was cutting the cake into pieces to form the fire truck. Cake real estate is very precious when you only have one real chance of cutting it properly the first time around. Luckily, I was able to perform the delicate surgery without any mishaps nor badly misshapen pieces!

I was pretty happy with the final product as I think it resembles a fire truck more so than the first one I made. I originally tried to use this color scheme with the first fire truck cake I made, but gave up mid-frosting as I wasn’t too confident in my piping abilities at the time. Also, I piped the white chocolate ladders thicker this time so they would not break as they did last time (it also didn’t help to have 95°F weather to soften the chocolate). I also added a “fire hose” using white marshmallow string rolled around a white chocolate base.

I was happy the mother who asked me to make it (for her son’s 3rd birthday) liked the cake!

      Hi, I was wondering what kind of icing you used to make this cake, and also if you ‘pre iced’ it before you put the final icing on it-(some people i heard do this to get rid of some of the ‘crumbs’ on the cake. Also, wanted to know if I could make this cake 2 days in advance and it still be moist and the icing be fine 2 days later. Thank you very much!!

        Hi Stephanie,

        So sorry for the delay. I have not been able to check my blog since my last post!

        I used a cream cheese frosting for the cake and yes, I pre-iced it. It does make a difference, so if you can, I would recommend you do it. I usually set my fridge to the highest setting and let the cake, pre-iced for about an hour and then do the final icing afterwards.

        I think the type of cake you make determines whether you can make the cake 2 days in advance. I think most cakes will be okay if you refrigerate up to the point of serving. I usually make the cake the night before and ice the day of if it is an afternoon-evening party. If it is morning party, I’ll make the cake the day before and ice that night. However, that’s me and it’s easier for me to focus and work on the cakes when the kids are sleeping.

    I got the marshmallow string from Party America. It comes as yellow, pink, and white marshmallow strings intertwined to form a rope. I just untwirled the white from the yellow and pink strings. You might need to get two as I found one package was not enough to make a nice, hefty hose roll.

For this particular fire truck cake (I have a picture of another one, smaller), it fed about 40-50 people.

    Ok, so here’s my situation and question now…
    I’m trying to make this larger one for my own son’s 3rd birthday party and I’m not sure how to make it bigger. I’ve got my 4 9X13 cakes cooling in Saran wrap in the fridge now…

    I’m just not sure how to make it taller AND wider AND longer so that the proportions are correct. I could use the original directions, stacking more pieces OR I could make the pieces longer and wider. But I’m not sure how to do both! Your second one looks almost just like the first one–which makes me think you managed to make it a little taller, wider, and longer.

    Right? What am I missing here? : )

      I’m so very sorry for the late reply! I was in Germany for the past 3 weeks for work and did not have time to visit my website for questions/comments nor even log into my email!

      I’m back now and just got your message. I hope you were able to get it to work out! What I did was kept the proportion the same, but increased it slightly by mulitplying by like 0.2 or something so that it was 20% larger, but in the same proportions. So, increased the width, height, and length by 20% and just cut the cake to fit that. It might be a bit harder to visualize with 4 9×13 cakes. I used a bigger pan – 18 x 26 so cutting it was a bit different than cutting from a 9×13 pan. But it is do-able.

        The cakes are nowhere near perfect, the sign on the fire station is crooked and the sun was making the fire truck sag even worse that it was already. But it was fun and everyone was very impressed! : D

      Hi Stephanie,

      I found that for icings, it will tend to harden depending on the amount of powdered sugar used. If you want a “softer” icing, use less powdered sugar. If it is a buttercream frosting, it will be more prone to melt though during warm/hot weather. For icings w/ less powdered sugar, I try to keep the cake cooled in the fridge for as long as possible before the party so it can keep it’s shape.

    I was wondering what type of frosting you use. I use a butter cream that contains only butter, no shortening. I always seem to have a hard time getting fire engine red. I don’t want to use a ton of no taste red, I feel it still has an after taste if using too much. Any suggestions? I love the red color you have achieved.

      Hi Dawn,

      I’ve used buttercream frosting and cream cheese frosting for most of my cakes. 🙂 I, too, don’t like the flavor of using shortening instead of butter. I’d have to say though that buttercream seems more difficult to work with because it “melts” faster in my warm hands when piping!

      Sorry to disappoint, but I just end up using a lot of the Wilton Red “no taste” food coloring. I remember reading somewhere though that another color, like pink or mauve or maroon, can help “pre-color” the frosting to minimize the use of the red food color. I have not tried this myself as I’ve noticed using different colors can affect the outcome of the final color. So, I just use the red.

      Something I’ve noticed though is that if you let the frosting sit for a couple of minutes or so, the red will deepen on it’s own. So, I’ll tint it red and then let it sit while I tint the other colors. When I come back I either add more red or am happy w/ the red.

      Not sure if this helps, but I use the colorless Wilton vanilla extract and use a very light colored butter (Land O’Lakes). I’ve seen butters that are a darker yellow which can affect my blue tinting (making it greenish), so I’ve stuck w/ the lighter colored butters.

        Thanks for getting back to me. I’ve had to do 2 firetrucks since I posted this. I found that if I make the buttercream a few DAYS in advance and leave it the fridge, the color really deepens. I used all red as well. The same is true for black, although I usually start with a chocolate buttercream first.
